Unusually, we will start with the cottage cheese filling. In a bowl, mix cottage cheese with cream, egg yolk, both sugars, and pudding powder.

Whisk eggs with sugar until foamy, add oil and milk, then mix in flour with baking powder and a pinch of salt.

Pour half of the batter into a buttered and floured bundt cake pan, pour the cottage cheese filling, arrange apricots, and pour the remaining batter. Bake for 45 minutes at 160 degrees. Time and temperature are approximate, adjust based on your oven.

Let the finished bundt cake cool completely in the pan and then flip it out to prevent it from falling apart !!!
