Lentils are one of the most affordable and nutritious foods I know. Our grandmothers knew that a bowl of lentil soup would satisfy and provide energy for the whole day. My version is lighter - without fatty additions, but full of vegetables and delicately flavored with herbs. The result? A soup that warms, satisfies, and at the same time does not burden.

Instructions
1
Finely chop the onion, chop the garlic and sauté everything in olive oil. Add diced carrots, parsley, and celery, sauté for a while.
2
Add red lentils, stir and pour in vegetable broth. Season with marjoram, bay leaf, soy sauce, and seasoning.
3
Cook for about 20 minutes until the lentils are soft. Depending on your preference, you can partially blend the soup for a creamier consistency.
4
Sprinkle with fresh parsley and serve.
