Wash the meat, dry it, and prepare it for the night in the fridge... Add salt, black pepper, bay leaf, garlic, a couple of dried wild mushrooms, a couple of juniper berries, and massage this mixture into the meat with a few tablespoons of oil. Seal and refrigerate overnight.

On the second day, either grill the meat, turning it several times for at least two hours, or place it in the oven, add a little water, and bake in the oven for at least two hours...

Slowly bring the ingredients to a boil, season with a little salt, and reduce by approximately half.

Serve with potatoes, which can be baked with the meat, or with rice, or simply with a vegetable salad, or good bread.
