Prepare the meat mixture. Add salt, pepper, ground sweet paprika, chili (to taste), 1-2 onions, herbs of your choice - I added a bit of rosemary to the ground meat. Let it rest in the fridge for an hour, then grill evenly on both sides. For vegetarians, here is the version - I started by sautéing onions, carrots in oil, and later added lentils (you can use any legume) to the hot mixture and cooked it as if you were making soup. Season with soy sauce and pepper and cook until the mixture has the least amount of water in the end. After cooking until soft, remove some of the mixture into a separate bowl, when removing from the pot, squeeze out all the water (soup). Add breadcrumbs, flour, spices like in meat, and let it cool for an hour in the fridge. If the mixture is falling apart in the pan, add more breadcrumbs, egg to improve it. Sometimes I also made a sunny-side-up egg for the burger, but this time I skipped it. Load it with whatever you like, what you enjoy.
After removing the meat from the grill / pan - On the meat / patty after baking, I put cheese (I used Gouda and Parmesan, or Edam or whatever is in the fridge) and immediately cover it (the cheese melts beautifully and the meat releases juice that you don't want to put directly into the burger because it will soak or burn your tongue)
Buns will be a separate recipe or buy them at Lidl if you don't feel like baking for an hour and a half (but they are worth the extra effort)
Toppings - choose what you want, I added tomatoes, iceberg lettuce, fresh red onion, and on top is flambéed caramelized onion.
Dressing - I used Belarusian mayonnaise, sweet / hot paprika, garlic (melted fresh), a little salt and pepper, and prepared.
