Spread grated apples on a small baking sheet lined with parchment paper (I used a 32 x 22cm pan), sprinkle with vanilla sugar, cinnamon, and coconut.

In a bowl, beat whole eggs with sugar and gradually add flour, pour over the apples and bake for about 15-20 minutes at 160 °C.

After removing from the oven, flip onto a damp towel, fold the paper, roll up, and let it cool.
