I cooked the peas, then blended them with butter and cream. Added mint and grated nutmeg and seasoned with salt to taste.

I prepared the sauce by sautéing shallots in butter, adding at least 30% cream and juice from one lemon. Seasoned to taste. By simmering, it will reduce (thicken) and at the end, I added finely chopped parsley.

Preparing the fish is simple. Cut into fillets, season with salt, optionally season with fish seasoning, and lightly fry in butter on both sides. Garnish with sliced lemon at the end and serve.
