When it's hot in the summer, I always like to prepare something refreshing like this fruit mix.

Toast sesame seeds in a tablespoon of vegetable oil.

Pit apricots and cut them into quarters. Cut the melon into larger cubes. You can remove the seeds from the melon for a better eating experience.

In a pot, mix sugar, 2 tbsp freshly grated ginger, olive and vegetable oil, soy sauce, and black pepper. Heat on low until the sugar dissolves. Pour the mixture with melted sugar into a sealed container, ideally a shaker, add sesame seeds, vinegar, and mix (shake). Seal the finished dressing and refrigerate.

Peel the cucumber and using a peeler or grater, create long, thin slices from the cucumber. We don't have to include the seeds in the salad.

On a large plate or in a bowl, arrange the melon and apricots. Garnish with cucumber, sprinkle with basil, and pour the dressing over.
