Finely shred or slice the cabbage into thin strips. Coarsely grate the carrot and add it to the cabbage. Add salt, sugar, and lemon juice or vinegar. Adjust seasoning to taste.

We had an open can of corn, so I added that too. Mix everything well, let it sit for a while, and serve either as a side dish or just as a light dinner option.
